Ingredients:
- 1 cup of chickpea flour
- 2 cups of water
- 1 tsp dried rosemary
- 1/2 tsp salt
- 2 tbsp olive oil
- Tomatoes
- Garlic scapes
- Chard
- Mushrooms
Directions:
- To make the frittata, sauté tomatoes, garlic scapes, chard, and mushrooms in a cast iron skillet.
- Mix chickpea flour with water, and add in dried rosemary, salt, and olive oil (use a whisk to ensure there are no lumps of flour).
- Pour the chickpea mixture over the vegetables and cook for two minutes over the heat before transferring the skillet to the oven.
- Bake for 15 minutes at 375 degrees.
- Let stand for two minutes, then ease the frittata out of the skillet in slices.
