With autumn fast approaching, everyone is looking for that perfect new fall dish to try. Well, great news! PGX would like to introduce you to our fabulous Supreme Savory Saag Chicken recipe. Tasty, healthy and (if you so choose) a little bit spicy, this dish is a wonderful recipe to try on a chilly night this fall!

Ingredients:

  • 6 cloves garlic, minced
  • 2 med onions, minced or extremely finely chopped
  • 2 tbsp olive oil
  • 1 lb chicken pieces, skinned and cubed
  • 2 cups (500 mL) crushed tomatoes
  • 2 tbsp ginger, grated and divided*
  • 1⁄4 cup coconut milk
  • 1 cup Greek fat free yogurt
  • 20 oz (600 g) spinach, thawed from frozen
  • 1⁄2 tsp ground coriander
  • 1⁄2 tsp turmeric powder
  • 1⁄2 tsp cardamom powder
  • 1⁄2 tsp cinnamon powder
  • 1 tsp salt
  • 10-15 g PGX
  • 1 tsp curry powder
  • 2 tsp lemon juice

Add some wild rice or quinoa for the ultimate high protein meal.

*If you would like to make the dish spicier (and with added health benefits!) use 1 tbsp of grated ginger while cooking and add another tbsp of raw ginger right before serving.

Method:

  1. Using a large pot, sauté onion and garlic in 2 tbsp olive oil for 3-4 minutes until transparent. Add chicken and reduce heat and simmer with lid on for 10 minutes until chicken is tender, stirring occasionally to prevent sticking.
  2. Put the spinach, coconut milk and spices into a food processor and blend until smooth.
  3. Addspinach, tomatoes, PGX granules and salt to the chicken mixture for an additional 20 minutes on a low heat to blend flavours and ensure chicken is well cooked. Add the extra ginger at this time if you want extra heat and health benefits.
  4. Enjoy as a main dish on top of brown rice, quinoa or rice noodles.

Hey PGX'ers! It's Tasty Tuesday and we're snacking smartly on the go!

Keep it healthy even when you have no time to plan...

We've all been there before: you're running around doing errands, you're at the airport waiting for your next flight, you're at a rest stop, or you're at the movies, and then your stomach begins to talk. What do you do when you've forgotten to pack a snack and there's no way you'll make it to your next meal without a bite of something to tide you over? What do you buy when you feel the need to munch on something at the cinema?

It's simple to write a strict diet plan, but it's another thing entirely to follow it to perfection. This is where a little bit of knowledge can go a long way in helping you reach your goals and avoid sabotaging your efforts to live a healthy life. If you are at the movies, a gas station, the mall, in front of a vending machine, or other such fast food stops, knowing what to avoid will help you maintain healthy eating habits.

Got a craving for chips? Try something different!

Let's give the potato a break and try homemade beet chips instead!

Every once in while I just crave that satisfying crunch of chips. But when you buy them from the store, most of the time all you can find are potato chips.  Maltodextrin, monosodium glutamate, modified corn starch, swiss cheese (milk, cheese cultures, salt, enzymes)... not exactly typical ingredients you can find in the store, right?

So let's go back to the root of the potato chip and use beets instead! All you need are beets, vegetable oil and an oven! The best thing about making these at home is that you can control how much oil you use. Not a fan of frying? Try a straight to baking method and let us know how it goes!

How To Make Beet Chips :

Peel and slice beets very thinly or use a mandoline

Fry beets in vegetable oil at 350 degrees, for about 2-4 minutes

Transfer to a baking sheet and bake at 350 degrees for about 10 minutes

Cool and enjoy!

Fall weather is here and we're thinking about comfort food and PGX!

Is it possible to eat all those yummy comfort foods and stay slim? Yes! And it's easy too.

Well, it looks like fall is fully arrived: overcast skies, shorter days, people dressed up in jackets and scarves, the shower of yellow and oranges leaves... to be followed with actual rain showers I'm sure. I'd love to say no rain but it'll come for sure. What does this weather do to me? I want to hibernate and eat thick, hearty stews and drink hot chocolate and become a couch potato in front of the fire.

Well, enjoy some couch potato time but make sure you get your exercise. As for the comfort food part, I'm happy to say that we don't have to completely avoid it if we want to stay slim! Food Network star, Ellie Krieger's So Easy cookbook has great and healthy recipes for us to enjoy!

How about a spicy and sweet Moroccan Beef Stew? Ward off the cold and get a ton of immune boosting iron with a bowl of this! Enjoy!

And guess what! This dish is full of fibre! With a little PGX you can have a day's worth all in one go!
